■What is sous-vide cooking? → Unlike conventional cooking methods such as "roasting," "steaming," and "boiling," raw ingredients (or pre-processed ingredients) are placed in a vacuum bag with seasonings and other ingredients, vacuum-packed, and then cooked in a water bath or steamed while still in the bag at a heating and cooking temperature scientifically proven to be most suitable for each ingredient. After that, it is rapidly cooled within 90 minutes and stored chilled or frozen, allowing it to be reheated, cooked, and served when needed, creating a rational system.
