■What is vacuum cooking? → Unlike conventional cooking methods such as "baking," "steaming," and "boiling," raw ingredients (or pre-processed ingredients) are placed in a vacuum bag with seasonings, vacuum-packed, and then heated and cooked in the bag using a water bath or steam at a heating and cooking temperature most suitable for each ingredient based on scientific evidence. After that, it is rapidly cooled within 90 minutes and stored chilled or frozen, realizing a rational system to reheat, cook, and serve when needed.
